Cultured dairy products have long been shown beneficial in reversing degenerative disease.  In the mid 1950’s, Dr. Budwig began her long and meticulous research on the importance of essential fatty acids (linoleic and linolenic) in the diet.  The basis of Dr. Budwig’s program is the use of flaxseed oil blended with quark (a cultured dairy product).  Backed with extensive research, the indisputable fact is: Supplementing your diet daily with flaxseed oil combined with sulphurated proteins (such as in cottage cheese, cultured dairy) could very well be the most important thing you do for yourself every day!!

In the 1990s Dr. Sam Queen showed the benefit of using cultured dairy products to reverse ‘acidemia’, a condition which he labels one of the 6 sub-clinical defects which leads to degenerative diseases including cancer.

Cultured dairy products include those which begin with milk, and, with the introduction of culturing microbes, have the lactose milk sugar converted by microbial action into lactic acid.  Cultured dairy products include kefir, cottage cheese, yogurt, and most soft & odiferous cheeses, like blue cheese and feta.

Dr. Budwig’s Basic custard is comprised of …..

1 cup Organic cottage cheese (you can also use kefir or yogurt)

2-5 Tbsp. of flaxseed oil- (high quality fresh refrigerated is important)

1-3 Tbsp. of freshly ground up flaxseed (coffee grinder ($15) works fine)

(NOTE:  In place of the previous 2 ingredients, you could just use NSP’s Liquid Flax Seed Oil (# 3162-1) which has the flaxseed parts in it – shake well & refrigerate.  You’ll just need 2 Tbsp. of NSP’s Liquid Flax Seed Oil per cup of cottage cheese.)

Pinch cayenne (red pepper) for circulation & pain.  Add to taste.

Enough water to make it soft so you can pour it into a glass.

Optional:  little garlic, little champagne.  (Sometimes I’ll add Feta cheese)

Place all the ingredients in a blender.  Make it very soft.  Drink as much as desired (at least ½ cup) every day.

I like to double or triple the recipe, make it quite liquid, put it in a quart Mason jar, and drink on it all week especially when I get hungry at inconvenient times.

    Dr. Budwig recommends against consuming meat or other animal based foods (other than the cottage cheese). She states that removing animal products will reduce acidity in the body. Not sure what to do in light of the keto diet. What are your thoughts about this?
